Veggie chimichangas

If you ever need a reason to grab an air fryer, this one is in the top tier of best things to cook. Simply create your favorite burrito, make sure its tightly wrapped, and then toss in the air fryer for 5-7 minutes for a lovely crisp finish. No oil needed, there’s usually plenty already in a regular flour tortilla.

Sure its not the greasy indulgent bomb of the deep fried variety – but its still a wonderful twist on a boring old burrito, and healthier to boot. I went veggie in the chimichanga picture above and used MorningStar Farms Crumbles with rice in the filling, with some McCormick Taco Seasoning.

To keep things getting too dry, some fresh pico de gallo, homemade guac and a dash of Wild Coyote lime-cilantro ranch.
