The composition is a blend of green and red olives, crunch veg like carrot and cauliflower with plenty of acidic heft from red wine, capers and more.
The condiment delivers a smack of zip and zest to whatever you add it to. Use it wherever you want to add some sharpness. For me that means dishes where the richness needs contrasting – a favorite of which – a side to a sausage/pepper/onion sub. With the greasy fried veggies and rich sausage, this salad is perfect to bring some clarity to the finished plate.
