Looking for something to do with that frozen curry in the back of your freezer? You know, the one that’s been sat there for months, without ever really convincing you to cook it up? Yep, you know the one.
Here’s one I thew together in less than 20 minute this week, and the result was surprisingly fabulous. I had a carton of Trader Joe’s Channa Masala stuffed down the back of the freezer – and as chance would have it – some lingcod that needed cooking too. Any firm white fish would be good here – cod, swordfish, halibut.
The fish is simply pan fried in a little oil, salt and pepper and then place over the microwaved curry.
