Ever had that single veggie burger linger in the fridge, seemingly holding on forever with no dish in site? That was the situation I’d been faced with for some time with this dish – until inspiration hit.
This meat free take on the Hawaiian dish loco moco is probably not in any part authentic but it’s absolutely wonderful. You’ll need:
- The veggie burger of your choice, Impossible is our current favorite
- Some quality rice
- A gravy of some sort, I went with the House Foods Kokumaro curry
- An expertly fried and still runny egg
I also finished with some chopped white onion for acidity and also a splash of Maruso Ghost Soy Sauce.
