This couldn’t be any more ridiculously simple. From start to finish it takes a little under thirty minutes – and it makes a wonderful side dish to Summery BBQ plates. There are more involved and nuanced recipes out there – but they don’t get any simpler than this.
Pro tip: a little extra honey or added jalapeño can add a fun twist to this one.
- 1/2 cup unsalted butter
- 1 cup corn meal
- 1 cup flour
- 1/2 cup sugar
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 eggs
- 1 cup buttermilk

Preheat your oven to 400F and use butter to grease a baking tray.

Mix together cornmeal, flour, sugar, baking soda and salt

Add eggs and buttermilk and melted butter. Mix together.

Add to baking dish and cook for 20 minutes.
