Ultra simple and easy buttermilk cornbread

This couldn’t be any more ridiculously simple. From start to finish it takes a little under thirty minutes – and it makes a wonderful side dish to Summery BBQ plates. There are more involved and nuanced recipes out there – but they don’t get any simpler than this.

Pro tip: a little extra honey or added jalapeño can add a fun twist to this one.

Buttermilk Cornbread

Ingredients
  • 1/2 cup unsalted butter
  • 1 cup corn meal
  • 1 cup flour
  • 1/2 cup sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs
  • 1 cup buttermilk
Instructions
  1. Preheat your oven to 400F and use butter to grease a baking tray.

  2. Mix together cornmeal, flour, sugar, baking soda and salt

  3. Add eggs and buttermilk and melted butter. Mix together.

  4. Add to baking dish and cook for 20 minutes.
